So I’ m definitely Not a Food Blogger nor a cook or baker, but I do love to try new recipes. I just recently returned from vacation and found myself vegging in front of the T.V. Watching the Food Network for most of July 3rd. This is not my typical behavior as the television is generally set on Disney or Nick,But my kids are still on vacation with Grandma,so I took advantage of this seldom opportunity to indulge.
I was watching Giada at Home and the episode was “Stars and Stripes” with 4th of July the next day, I really had No intention of baking or cooking as we had no plans. I have the say the recipe for the Peach and Blueberry Crumb Pie looked pretty easy as I watched and looked real yummy! So after much thinking and contemplation I decided to jot down the ingredients I didn’t have on hand.
I didn’t go to the market till late July 4th, I did have difficulty finding the Almond Flour at my market, so I went without. I did deviate from the Giada recipe and kinda made it with what I had on hand. But none the less it was a HIT! Here is Giadas recipe
The changes I made from the original recipe are as follow:
Giadas Recipe calls for
– tapioca pearls in the filling, which I did buy but just chose not to use at all
– I omitted the 1/2 cup of Almond Flour called for in the topping as it was not sold at my local market and replaced it with 1 cup of all purpose flour.
– although I did follow the measurements of 1/2 cup of brown sugar for the topping I think I will add an additional 1/4 cup the next time I make this delish dessert.
I had lots of crumb topping leftover which I plan to use again this week for my next recipe.
The pie had the perfect amount of tartness from the lemon zest and lemon juice. My husband and I were really impressed with the pie. I’ve only made from scratch apple pie in the past. My neighbor Rick could not wait to finish his burger to dig right into the pie for dessert served up with a scoop of vanilla ice cream. He was surely Not disappointed with the results! He even came over the next morning with an empty plate and coffee in hand for a slice of pie for breakfast. This will definitely be a repeated go to dessert and a new favorite for our neighborhood gatherings.
